It’s true, if you put the lime in the coconut you really do feel better! Of course that little recipe can always be improved by the addition of vodka but the fun police seem to frown upon that before breakfast, or lunch, when in charge of children or going to work, basically any time you could really fucking use a cheeky shot or two, or three. But seeing as the killjoys have kiboshed that I’ve resorted to protein instead for these coconut and lime protein balls, my latest little creation in the ball shaped things you actually want to put in your mouth category. Despite their miserable lack of vodka they’re tasty little buggers, a bit zingy, a bit sweet and dare I say it, a refreshing change from the chocolate balls which are my usual go-to.
Get this stuff
1/2 C cashews soaked for 2 hours then drained
1/2 C shredded coconut plus extra for rolling
4 Tbl almond meal
2 Tbl chia seeds
1 Tbl coconut oil
1 Tbl rice malt syrup or preferred liquid sweetener
Juice and zest of 1 lime
Do this with it
Throw all the ingredients into a food processor and blitz to create a thick, sticky, cookie dough like mixture. Roll into balls and toss in coconut to coat if you like your balls hairy or or keep ’em bald if you prefer. Store in the fridge and get them in your gob when snack attacks strike.
