Salted Caramel Macadamia, Cashew & Coconut Butter - Nut Butter Slut Heaven
Salted Caramel Macadamia, Cashew and Coconut Butter, or as it shall henceforth be known Nut Butter Slut Heaven - this is actual wet dream in a jar.This gorgeous, creamy jar of heaven make is a thing to make this nut butter slut very fucking happy indeed. Just the name is enough to incite a case of damp knickers. This was originally based on a favourite recipe from Living Healthy With Chocolate for White Chocolate Macadamia Butter but just for shits and giggles and food porn dribbles, I changed things up a bit by roasting the nuts, adding coconut into the mix, swapping honey for coconut sugar for its rich caramel flavour and adding a bit of extra salt for the salted caramel kick. And this is the result; gorgeous, golden brown nut butter good enough to suffer serious personal injury for. No really, I have the scars. When those nuts come out of the oven they're hot, when you throw them into the vitamix and puree them at a gazillion rpm the result is thermo-fucking-nuclear. I believe I may have actually removed part of my fingerprint doing a dip test, and there is skin in my mouth that feels like it may be permanently blistered. How d'ya like my perseverance though - burnt my finger but still put that molten lava into my mouth regardless. Such is the commitment to the cause of a nut butter slut. So if, like me, you'd do thoroughly indecent things for good nut butter I seriously think you need this one in your life, just try to avoid a trip to A&E in the process!
Get this stuff
1 C macadamias
1 C cashews
1 C shredded coconut
35 grams cacao butter
1 T stevia, coconut sugar, rice malt syrup, maple syrup or your sweetener of choice
1 tsp vanilla paste
1/2 tsp pink salt
Do this with it
Pre-heat the oven, spread the nuts on a tray and very lightly roast them until they're just starting to go light brown. This should take a maximum of about 10 minutes and you should definitely keep a close eye on them as they can go from 'Ooooh perfect' to 'Oh. Fuck' in a matter of minutes.
I've been warned about throwing super hot nuts into the blender as the heat can warp the jug so I generally let them cool for a few minutes first. Then toss them in along with all the other ingredients and blitz until you have a smooth, creamy mixture. I've found this mixture reaches that gorgeously runny point a lot faster than other nut butter due to the oiliness of these particular nuts and the cacao butter so it should be somewhere between 2 and 5 minutes depending on how high powered your blender is. And that's it.
Pour into a jar and do your best not to consume the whole lot in one sitting because this stuff is seriously, ridiculously good. So velvety smooth & creamy, total unadulterated food porn, there'll definitely be no question of spitting or swallowing here!
Supercharge it and sex it up with optional extras
At the risk of messing with a very good thing I spent some time playing with the recipe and came up with a few variations that make awesome into extraordinary.
Give it a protein boost by adding 2 scoops (about 60 grams) of vanilla or coconut flavour protein powder, my favourite is True Protein Raw Coconut WPI
Change up the flavour by adding 1 Tbl dark cacao or cocoa for chocolate or spice it up with 1 tsp of golden latte spice mix or turmeric for a mellow yellow superfood boost. I'm in love with Golden Grind's Coconut and Cacao version - it's pretty fucking special!
Dollop small teaspoonfuls onto a lined baking tray or plate and whack them in the freezer for about half and hour to make supercharged nut butter buttons, perfect for an instant mid-afternoon fat and protein hit - no spoon required!
