I bloody love Friday. Not because it's the end of the week and my husband will be home for two days to even the score in the battle against the small people- although that's a definite bonus. And not because I know with absolute certainty that there is a glass of wine in my very near future (usually after lunchtime at least but I like to keep an open mind about these things). No, it's because Friday is Daycare day, the morning I do a wicked mother happy tap-dance out of the building as leave the two year old to trash someone else's joint for the day.

Just kidding, I can't tap-dance. No really, I do miss my little sidekick when she's off doing her thing all day, but she has a blast and it's pretty cute watching her trot off excitedly lugging her little Peppa Fucking Pig backpack loaded with all her important things. Important things being food of course - she's so my daughter. I try to fill her lunchbox with food that's interesting as well as nutritious, these little nut free bliss balls are one of my latest knock-togethers and they've been going down a treat with both kids. That may have something to do with the fact that I let little Z help make them (possibly against my better judgement!), by help I mean she got to turn the food processor on, but really that's about all there is to it!

Get this stuff

1 C dates

1/2 rolled oats (or sub in quinoa flakes if you prefer gluten free)

1/2 C shredded coconut

1/2 C coconut flour

1/4 C chia seeds

1 Tbl coconut oil1 tsp vanilla 

Do this with it

Soak the dates in hot water to soften, or just nuke 'em for a minute or two if you're as impatient or disorganised as me then drain then but reserve the soaking liquid.

Throw all the ingredients in the food processor the blend adding a tablespoon of the soaking liquid at a time until the mixture comes together in a sticky lump.

Roll into little kiddie gob sized sized balls then roll in coconut to coat.

Store in the fridge or freezer and fire at will to avoid mini hanger induced tantrums.
